One of the famous mole chillies from Mexico. When dried mulatos are known as anchos, for which reason they are sometimes listed in seed catalogues under the name Ancho mulato.
In Mexico ripe mulato chillies are used to prepare chiles rellanos, or dried and ground as a component of mole negro. They can also be used as an alternative to bell peppers in salads or general cooking.
Mulatos make excellent chilli powder, mild but with a rich sweet flavour.
